How would a possible combat between two Roman legionaries and a medieval knight end?

I have been a fan of ancient and medieval history for many years, especially the Roman Empire and the Crusades.

Today I found a curious video that combines both hobbies. The YouTube channel Dequitem published a video on July 24th showing a combat between three reenactors very well equipped with two types of military equipment: that of the heavy infantry of the Roman legions of the Late Empire (284-476 AD, when these Roman soldiers achieved a high level of protection in their plate armor) and a medieval knight wearing plate armor from the Late Middle Ages (an Italian style, recognizable by its rounded shapes).

Obviously, it would be an unequal fight, two against one, but the knight has some advantages. Roman legionaries wore good armor on their torso and head, but their faces, arms, and legs (very sensitive areas in close combat with bladed weapons) were not protected. After all, legions were infantry units with compact formations and fought against enemies generally less well protected than the legionaries. These formations benefited from the rectangular shape of the rectangular "scutum", and it was practical to have a short sword like the double-edged Roman "gladius".

The medieval knight in the video uses a mace (a very effective and powerful weapon at close range, in his left hand) and a horseman's pick (known in French as a "bec de faucon", falcon's beak, a lethal weapon at close range even used against armor). The knight does not carry a shield, a protection that was very common since the High Middle Ages, but this disadvantage is compensated by a full body harness, which offers great protection although it hinders his movement. It should be noted that these armors were developed especially for heavy cavalry, which was the most lethal military unit of the Middle Ages until it was finally defeated by crossbows, pikes and finally the first firearms.
